REVERSE SEARED AGED RUMP STEAK

  • 1.2 kg aged rump at room temperature (4 cm thick)
  • 1 tablespoon olive oil
  • salt and pepper grinders

Blot the steak with kitchen paper. Rub all over with olive oil and sprinkle with salt and pepper.
Put the steak into an airfrier basket. No need to preheat.
Switch on AIRFRIER function, set time for 50 minutes at temperature of 82°C.
This duration with the thickness of meat provides a rare to medium steak. Turn over when the Turn Food message appears.
Once done, remove steak from the basket.
Heat a heavy based nonstick skillet and sear both sides for 2-3 minutes.
Adjust time on airfrier for smaller and thinner piece of steak.
This will be my “go to” recipe for the future.
