OUMA JULIAN’S FRUITCAKE BISCUITS
- 250 g margarine
- 1 cup sugar
- 3 cups fruit cake mix
- 1 cup nuts or Peanuts, chopped
- 1 cup glazed cherries, halved
- 2 packs Marie biscuits, crushed fine
- 2 teaspoons vanilla essence
- 2 eggs
- 20 – 30 ml Brandy, optional
Melt the butter over medium heat in a big pot. Add the sugar and stir well.
Add the fruit, nuts and halved cherries.
Mix and boil for 15 minutes, stir often as it can burn easy.
While hot take the egg mix with the vanilla and beat, then add the egg mixture to the fruit while hot and stirring to prevent the egg from separating.
Optionally you can add 2 – 3 caps Brandy. Add the crushed biscuits last and mix well.
Press down in a ring pan and set for 24 hours. I found my rusk tin works a bit better.
