MOIST FRUIT CAKE LOAF
Myne het donker uit gekom. Het treackle- en molasses suiker gebruik. Maar hy is heerlik. Soos jul kan sien. My man het hom al halfpad verober. Ek sal hom beslis weer bak.
- 250 g all-purpose flour
- 200 g brown sugar
- 250 g mixed dried fruits (raisins, currants, chopped prunes, cherries)
- 120 ml dark rum or fruit juice, for soaking)120 ml melted butter or vegetable oil
- 3 large eggs
- 60 ml black treacle or molasses
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon mixed spice or allspice
- ½ teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract
- ¼ teaspoon salt
Soak the mixed dried fruits in rum or fruit juice for several hours or overnight to soften.
In a large bowl, whisk together flour, baking powder, baking soda, salt, and spices.
In another bowl, whisk eggs, brown sugar, melted butter, molasses, vanilla, and almond extract until well combined.
Stir in the soaked fruits (with any remaining liquid).
Gradually add the dry ingredients, mixing gently until the batter is smooth and thick.
Pour into a greased and lined 9 × 5-inch loaf pan.
Bake in a preheated oven at 170°C (340°F) for about 55 – 65 minutes, or until a toothpick inserted in the center comes out clean.
Cool for 10 minutes in the pan, then brush with a little extra rum or syrup for added moistness.
Allow to cool completely before slicing.
Nota:
Ek het 1 koppie donker rum gebruik ipv ‘n halwe koppie.
