MOIST FRUIT CAKE LOAF

Myne het donker uit gekom. Het treackle- en molasses suiker gebruik. Maar hy is heerlik. Soos jul kan sien, my man het hom al halfpad verober. Ek sal hom beslis weer bak.
- 250 g all-purpose flour
- 200 g brown sugar
- 250 g mixed dried fruits (raisins, currants, chopped prunes, cherries)
- 120 ml dark rum or fruit juice, for soaking)120 ml melted butter or vegetable oil
- 3 large eggs
- 60 ml black treacle or molasses
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon mixed spice or allspice
- ½ teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract
- ¼ teaspoon salt
- Soak the mixed dried fruits in rum or fruit juice for several hours or overnight to soften.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, and spices.
- In another bowl, whisk eggs, brown sugar, melted butter, molasses, vanilla, and almond extract until well combined.
- Stir in the soaked fruits (with any remaining liquid).
- Gradually add the dry ingredients, mixing gently until the batter is smooth and thick.
- Pour into a greased and lined 9 × 5-inch loaf pan.
- Bake in a preheated oven at 170°C (340°F) for about 55 – 65 minutes, or until a toothpick inserted in the center comes out clean.
- Cool for 10 minutes in the pan, then brush with a little extra rum or syrup for added moistness.
- Allow to cool completely before slicing.
Nota:
Ek het 1 koppie donker rum gebruik ipv ‘n ½ koppie.
