BACON, EGG AND CHEESE BREAKFAST CASSEROLE

Note from Melissa Ann Vermeulen – It was quite nice. I’m sure you could add extras to it, like mushrooms, peppers, etc.
- 6 large eggs
- 2 cups milk
- 1 teaspoon salt
- ½ teaspoon dry mustard
- 6 – 9 slices, cubed bread
- 12 slices, cooked and chopped bacon
- 1 cup, grated cheddar cheese
- Grease a 9″ x 13″ baking dish.
- Mix together the eggs, milk, salt and dry mustard.
- Spread the bread cubes in the bottom of the dish, sprinkle the bacon and cheddar cheese over the bread.
- Pour the egg mixture over.
- Cover with plastic wrap and refrigerate overnight.
- In the morning bake at 180ºC for 45 – 60 mins.
