I made mayo!

  • 1 egg yolk
  • 2 tablespoons honey/Dijon mustard (in photo)
  • 2 tablespoons vinegar
  • 240 ml sunflower oil
  • salt and pepper to taste, optional

Beat the egg yolk, honey and vinegar until frothy on your highest speed (I used my stand mixer).
Add a few drops of oil and continue to beat, adding a few more until it thickens.
Now pour 235 ml sunflower oil in a slow drizzle as you keep beating your mayonnaise on the highest speed.
Add salt and pepper to taste but I find this to be perfect as is.
Lovely creamy sweet/tangy!
