CREAMY PASTA WITH SMOKED SALMON

  • 2 onions, chopped
  • 200 g smoked salmon
  • 2 tablespoons olive oil
  • 300 g uncooked screw noodles
  • 15 g fresh, flat parsley
  • 1 lemon
  • 250 g mascarpone

Cut the smoked salmon into one cm pieces.
Heat the tablespoons of oil in a frying pan and fry the onions for three minutes.
Add the salmon and fry for five more minutes.
Cook the pasta according to the instructions on the package.
Finely cut the parsley.
Clean the lemon and grate the yellow peel over the salmon.
Press the juice of half of the fruit over and cut the other half into four parts and keep it aside.
Drain the pasta and add it to the salmon.
Stir in the mascarpone and two thirds of the parsley.
Adjust the taste with lemon juice and pepper if necessary.
Sprinkle the reset of the parsley over the dish and serve with the four pieces of lemon.
