CHOCOLATE MUFFINS
- 125 g butter
- 1 cup of brown sugar
- 2 eggs
- 1 teaspoon vanilla essence
- ½ cup milk (if batter is too thick then add 1 or 2 tablespoons more milk)
- 1 ¼ cups cake flour
- 2 teaspoons baking powder
- 4 tablespoons cocoa
- ¼ cup of choc chips, optional
Melt the butter for 20 to 30 seconds in the microwave then whisk in the eggs, sugar, vanilla essence and milk.
Sift the flour, baking powder and cocoa powder together and add to the butter mixture.
If you are adding choc chips, add half the quantity into your mixture and keep a few to sprinkle on top.
Bake at 180°C for 20 to 25 minutes.
So easy and delicious.
