CHAKALAKA BREAD
You can bake mini loafs or muffins.
- 500 g (780 ml) cake flour
- 10 ml baking powder
- 4 large eggs, beaten
- 5 ml salt and pepper to taste
- 125 ml grated Cheddar cheese
- 1 can mild chakalaka
- about 100 ml milk if necessary, optional
- selection of cheeses, pâtés and fruit to serve with the bread
Sift the flour, baking powder and salt together. Stir in the remaining ingredients except the cheese. Add a little more milk, if necessary.
Spoon into a greased loaf tin, add the cheese on top and bake in a preheated oven for 45 minutes or until a skewer inserted comes out clean. Cool on a wire rack and serve the sliced bread with a selection of different pâtés, cheeses and fruit.
Note: Elsabie:
Used this recipe but added ½ teaspoon of turmeric to give deep golden colour and extra pinch of dried chilli flakes. Baked in mini loaf tins and got exactly 18.
