BLEEK CELERY SALAD
- 5 stems celery
- 1 lemon
- 4 spring onions
- 100 g walnuts
- 3 tablespoons of mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon fine mustard
- lemon zest to taste
- pepper
- salt
- 3 apples
Cut the stems from the celery bush, remove ‘hard’ wires and wash the stems under running water. Dap them dry and cut them into thin slices.
Peel the apples, remove the core and cut the apple into small cubes, sprinkle them with some lemon juice.
Cut the spring onions into thin rings including the green and chop 1 tablespoons of leaf celery fine.
Put all cut fruit / vegetables in a large mixture bowl and mix the slightly smaller chopped walnuts through it.
Make a dressing by stirring the mayonnaise with 3 tablespoons of water, lemon juice and the mustard.
Make the dressing on taste with zest from the lemon peel, salt and freshly ground pepper.
Stir the dressing through the vegetable mixture and preferably have it rest for an hour.
