SAMP PUDDING
“I have always enjoyed this dish. As a child we had it as a sweet veggie, but lately we enjoy it with custard too, or just on its own.”
- 1 kg raw samp
- Sauce:
- 6 teaspoons all-purpose flour
- 6 teaspoons baking powder
- 4 teaspoons mixed spice
- 1 cup milk
- 2 dessert spoons butter/margarine (25 ml)
- 1 cup sugar
Cook samp as normal till soft.
Place six cups of cooked samp in an oven dish and mash the samp slightly.
Mix all the sauce ingredients together and pour over the samp. Mix with samp.
Bake in pre-heated oven at 180 °C for about 45 minutes.
