MINI LEMON MERINGUES 

MINI LEMON MERINGUES

  • 6 Nestle Kit Kat Citrus
  • 4 tablespoons butter, melted and optional
  • 1 can condensed milk
  • 4 eggs split
  • ½ a cup of lemon juice (depending on taste about 8 small to medium lemons)
  • ⅔ of a cup castor sugar

Preheat oven to 160ºC.  Line a muffin tray with muffin lines. (you can also make the mini muffins… smaller)
Crush kit kat citrus into crumbs.  Add butter if using and press into muffin liners.  Put in fridge until needed.
Whisk egg yolks until thick and doubled in size.
Add condensed milk and mix well.
Slowly pour in the lemon juice to taste and mix well. Pour this mixture over the bases.
In a large clean bowl beat egg whites until stiff. Slowly add castor sugar and beat until smooth and shiny.
Pipe Meringues onto lemon curd and bake in over for about 10 min.
Have a look at colour or Meringues (golden)
Serve at room temp.
