HOMEMADE CHRISTMAS MINCE PIES
Today I baked my first batch of Christmas Mince Pies using my fruit mince which I made last week. The mince was delicious. Very moist without being runny.
The pastry was made in my food processor. A bit of a process but worth it.
- Shortcrust Pastry:
- 1¾ cup cake flour
- 60 g butter cubed
- 5 tablespoons coconut oil
- ½ teaspoon salt
- Approx 1 cup ice water, put salt in
- Filling:
- fruit mince (store bought or homemade)

Mix butter and coconut oil into the flour. Mix lightly and place in fridge for 20 mins.
Remove from the fridge, put into the mixer and pulse mix to combine.
Slowly add water/salt mix just till dough starts coming together. Refrigerate for 20 mins.
Roll out dough and cut into 3 pieces. Wrap in cling wrap and refrigerate for 20 mins.
Take one portion at a time and roll out fairly thinly. Cut out your bottoms and stars for the tops.
Place in shallow tart tins. Place 1 teaspoon fruit mince in each shell. Top with pastry stars.
Bake at 200 º C for 20 mins till golden.
Remove from tins and cool.
Dust with icing sugar.

Used 1 bottle of fruit mince
