CHRISTMAS FRUIT MINCE
I was shocked when I saw the price of a bottle of fruit mince in the shop this week so I decided to try and make my own. Threw a whole lot of recipes together and this is what I came up with. Can’t wait to make my mince pies.
- 1 cup raisins
- 1 cup cranberries
- 1 large juicy orange
- 1 large juicy lemon
- 2 apples, peeled, cored and grated
- ½ cup dry dates, chopped
- ½ cup Turkish apricots, chopped
- 10 mint leaves chopped, suggestion only, can use less or more
- 2 stalks of rosemary, stripped and chopped
- ½ cup glace cherries, chopped
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon ginger
- 1 teaspoon mixed spice
- 5 cloves
- pinch of salt
- quarter cup of Hanepoot or Port
- ½ cup Brandy
- 1 cup sugar
Mix all of the above and leave overnight. Cook the ingredients the following day for 20 minutes. Check the sweetness level and add sugar if necessary. Bottle in clean sterilized jars.
