CORNED BEEF PIE
Ek deel gou hierdie lekker souttert resep met julle. Iemand het my gister gevra vir ‘n resep met bully beef in. Ek maak hierdie resep al van die laat 70’s af, dit kom uit een van die eerste Huisgenoot Wenresepte. Dis absoluut heerlik en ‘n staatmaker by my.
- Crust:
- 140 g (1 cup) cake flour
- 10 ml baking powder
- pinch of salt
- 125 ml milk
- 100 ml cooking oil
- 1 egg
- Filling:
- 1 tin (300 g) corned beef, mashed
- 1 tin (285 g) creamed mushrooms
- 3 eggs, beaten
- 200 g (2 cups) grated Cheddar cheese
- 50 ml finely chopped fresh parsley
Preheat oven to 180ºC. Grease a 2 Liter ovenproof dish or spray with Spray and Cook.
Sift together the flour, baking powder and salt. Beat the milk, oil and egg, add the flour mixture and blend well to form a soft pastry mixture. Spread on the bottom of the dish. (Ek gebruik die agterkant van ‘n groot lepel).
Spoon the corned beef evenly over the pastry. Combine the creamed mushrooms, eggs, cheese and pastry and spoon the mixture over the meat.
Bake on the middle shelf of the oven for 45 minutes, or until done. Allow to cool a little before cutting into portions.
