BOILED FRUIT CAKE
- Boil together:
- 500 g mixed fruit (excluding cherries if the cherries is not part of your mix)
- 1 cup sugar
- 125 g butter/margarine
- 1 cup water
- pinch of salt
- Next day add the following:
- 3 tablespoons brandy (can also use whisky)
- 1 teaspoon mixed spices
- 1 teaspoon bi-carb in 1 tablespoon warm water
- 2 beaten eggs
- cherries (if not in the mix already)
- Stir in gradually:
- 2 cups sifted cake flour
- 1 heaped teaspoon baking powder
Mix well with wooden spoon.
Place in lined cake tin.
Bake at 150°C for 1 hour 45 minutes.
Brush with brandy while still hot. (Can also use whisky)
