BOILED FRUIT CAKE

  • Boil together:
  • 500 g mixed fruit (excluding cherries if the cherries is not part of your mix)
  • 1 cup sugar
  • 125 g butter/margarine
  • 1 cup water
  • pinch of salt
  • Next day add the following:
  • 3 tablespoons brandy (can also use whisky)
  • 1 teaspoon mixed spices
  • 1 teaspoon bi-carb in 1 tablespoon warm water
  • 2 beaten eggs
  • cherries (if not in the mix already)
  • Stir in gradually:
  • 2 cups sifted cake flour
  • 1 heaped teaspoon baking powder

Mix well with wooden spoon.
Place in lined cake tin.
Bake at 150°C for 1 hour 45 minutes.
Brush with brandy while still hot. (Can also use whisky)
