SWEET CHILLI AND LIME MARINADE FOR PORK OR LAMB

Ek het hierdie marinade probeer en sommer lams tjoppies daarin gesit. Ek het dit oornag gelos en in die oond sommer so in die marinade gebak by 180 ºC en dit is vingerlek lekker.

  • 1 kg pork ribs or lamb chops
  • For the marinade:
  • 200 g sweet chilli sauce
  • 150 g tomato sauce
  • zest and juice of 3 limes, plus lime wedges, to serve
  • 5 garlic cloves, crushed
  • 5 tablespoons soy sauce
  • 150 ml water

For the marinade, mix the ingredients with the water to make a smooth sauce.
Coat the ribs / chops in the sauce and leave to marinate for 30 minutes or overnight.
Heat the oven to 220 ºC (200 ºC, gas 7).
Place the meat on a rack in a roasting tray lined with foil.
Cook for 30 minutes, turning halfway. Or cook on the barbecue – start in a hot spot then move to the edges.
Serve with lime wedges.
