SPONGE CAKE
Baked a sponge cake today for my birthday and gave it to my kids to decorate. The result is a KitKat, Smarties and Aero cake.
- 4 eggs
- 1 cup sugar
- 1 teaspoon vanilla essence
- ½ cup oil
- ½ cup boiling water
- 1½ cups cake flour
- 3 teaspoons baking powder
Cream eggs, sugar and vanilla essence until light and fluffy.
Combine oil and boiling water and mix into your egg mixture.
Add sifted cake flour and baking powder a little at time and fold in.
Grease 2 ovenproof dishes. Pour mixture in and bake at 180 ºC for 20 – 25 minutes.
Topped with whipped cream and some candy.
