SPICY SOETKOEKIES

All time 🇿🇦 favourite.

  • 500 g soft butter
  • 540 ml castor sugar
  • 4 large eggs
  • 5 ml vanilla extract
  • 785 g cake flour
  • 360 ml cornstarch
  • 10 ml baking powder
  • 5 ml salt
  • 15 ml allspice ground
  • 15 ml cinnamon ground
  • 10 ml nutmeg ground
  • 5 ml cloves ground
  • 5 ml white pepper

Blend butter and castor sugar until creamed, light in colour and fluffy in texture. I use my Kenwood K-beater.
Add the eggs and vanilla and blend well. Sift the rest of ingredients together. Start adding the dry ingredients bit by bit to the creamed butter/sugar/egg and mix thoroughly until all the flour is incorporated.
Sprinkle a well disinfected and dry work surface with flour and roll the dough out in batches and press out shapes. Aim for approximately 5mm thickness.
Bake on baking paper on a sheet at oven preheated to 180°C for about 14 minutes.
I baked in my gas oven. Depending on the size you should get about 140 cookies.

Note:
Next time I will add more spices as we like it really spicy like Speculaas
