SEMOLINA CAKE
- 180 g butter
- ½ cup sugar
- 2 eggs
- 2/3 cup Semolina
- ½ cup desiccated coconut
- 1 ½ cups self-raising flour
- ¼ teaspoon egg yellow food colouring
- 1 cup milk
Cream butter and sugar well. Add eggs and cream some more. Add milk and mix.
Sift dry ingredients and mix in the dough. Bake in a greased pan of your choice at 180 ºC for 30 minutes.
As soon as it comes out of the oven make a syrup by combining the following and bringing to the boil:-
- ¾ cup sugar
- 1 cup water
- ¼ teaspoon cinnamon powder
- 1 teaspoon cardamom
- 1 teaspoon rose water
Pour syrup over the cake whilst it’s still hot.
Lovely and simple.
Delicious with a cup of tea or coffee.
