SELF SAUCING CHOCOLATE PUDDING
- 2 eggs
- ½ cup caster sugar
- 100 g of butter, melted
- 1 teaspoon of vanilla essence
- 2 cups of self raising flour
- ¼ cup of cocoa
- ½ cup brown sugar
- a pinch of salt
- 1 ½ cups boiling water
Mix eggs and caster sugar until light and fluffy.
Stir in the butter and vanilla essence, mix well.
Sift the flour and salt together and fold it into the egg mixture.
Mix the cacao and brown sugar and keep aside.
Spoon the batter into a deep sprayed oven-dish and sprinkle with the brown sugar mix.
Pour the boiling water over the back of a spoon, over the batter so that the water floats on top of the batter.
Put into a pre-heated oven at 180 ºC for 35 minutes.
