SCONES BAKED WITH CREAM

- 2 cups cake flour
- 4 teaspoons baking powder
- 1 teaspoon sugar
- 100 g butter
- 1 egg
- ½ cup fresh cream
- ½ cup full cream milk
- 1 beaten egg for brushing on top
- Sift the dry ingredients in a mixing bowl and rub the butter into the dry ingredients with your finger tips.
- Mix together the egg, fresh cream and milk.
- Add the liquids to the flour mixture (add more flour if too sticky).
- Place the dough on a lightly floured surface and cut or roll the dough in portions. I made 12 mini sized scones.
- Place the dough portions on a prepared baking sheet en brush the tops with a beaten egg.
- Bake in a preheated oven at 190ºC for 10 minutes.
