SCONES BAKED WITH CREAM

  • 2 cups cake flour
  • 4 teaspoons baking powder
  • 1 teaspoon sugar
  • 100 g butter
  • 1 egg
  • ½ cup fresh cream
  • ½ cup full cream milk
  • 1 beaten egg for brushing on top
  • Sift the dry ingredients in a mixing bowl and rub the butter into the dry ingredients with your finger tips.
  • Mix together the egg, fresh cream and milk.
  • Add the liquids to the flour mixture (add more flour if too sticky).
  • Place the dough on a lightly floured surface and cut or roll the dough in portions.  I made 12 mini sized scones.
  • Place the dough portions on a prepared baking sheet en brush the tops with a beaten egg.
  • Bake in a preheated oven at 190ºC for 10 minutes.
