SAUCY CHOCOLATE CAKE

I made this cake for our Christmas eve dinner. Very tasty. Very moist.

  • Cake:
  • 1 cup  cake flour
  • 1 teaspoon baking powder (plus half a teaspoon)
  • half a cup of oil
  • half a cup of boiling water (I added a teaspoon full of coffee powder 😁)
  • 1 cup of sugar
  • quarter teaspoon salt
  • quarter teaspoon bicarbonate of soda
  • quarter cup of cocao
  • 4 eggs, separated
  • extra teaspoon baking powder

Preheat oven to 180ºC.
Mix cocao with the boiling water (coffee).
Mix the rest of the dry ingredients together. Add oil and egg yellow and mix.
Add cocao to the mix and beat until nice and creamy.
Beat egg whites until stiff.  Add an extra teaspoon of baking powder and mix well. Fold into the rest of the chocolate mix with a metal spoon. Pour into ring baking tin (or 2 x 20 cm round tins) .
Bake for about 45 min until done.
Rest in tin for 10 min then turn out to cool.

  • Syrup:
  • ¾ tin Ideal Milk
  • 1 teaspoon vanilla extract
  • ½ a cup of sugar

Boil all ingredients together on low heat until a nice caramel colour, mixing constantly.
Once cake is cool, pour sauce over cake to soak in.

  • Decorate the cake:
  • ¼ tin Ideal milk
  • 200 g Cadburys whole nut chocolate (any actually)

Melt together and pour over the cake.
Decorate as desired.
