ROASTED LEMON AND HERB POTATOES

Ek het my aartappels vooraf gekook vir 15 min. Ek het ook die aartappels voor kerk in die oond gebak vir 15 min teen 180°C en die oond afgedraai na 70°C vir 2½ uur. Na die tyd het ek die oond op rooster gedraai totdat die aartappels se skil heerlik bruin was. Wenk hou dit dop sodat die botter nie brand nie.

  • 1 small bag baby potatoes
  • Oil mixture:
  • ¼ cup olive oil
  • 2 tablespoons melted butter
  • 3 cloves garlic, minced
  • 1 tablespoon chopped Italian parsley leaves
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • scant ¼ teaspoon salt
  • 3 dashes ground black pepper

Preheat oven to 180°C. Cut slits on potatoes, do not cut through. Mix all ingredients in oil mixture together.
Place potatoes in a roasting pan and brush with oil mixture. Make sure to brush inside slits of potatoes. Save some for basting.
Roast potatoes for 1 hour, basting oil mixture at 30 minute interval using remaining oil mixture.
Serve immediately after roasting.
