Notes:
Mirin is a cooking wine from Japan and made from fermented rice.
Substitutes:
Sake which is also a rice wine, but use one tablespoon of sake and ½ teaspoon of sugar.
Apple cider vinegar, same amount, but be carefull as it can overwhelm your dish.
