PUMPKIN FRITTERS ALA SABRINA

  • 500 ml butternut squash, cooked and put through blender
  • 300 ml flour or maybe a little more depending if your butternut mixture is a little wet
  • 10 ml baking powder
  • pinch salt
  • 1 extra large egg
  • 50 g caster sugar
  • 80 g sultanas
  • 30 ml orange, lemon or rum liqueur (if your don’t use liqueur, use orange juice)
  • cinnamon and caster sugar, mixed for sprinkling
  • rind of one orange
  • oil for frying

Soak the sultanas in the orange, lemon or rum liqueur or orange juice.
Take the blended butternut, add flour, baking powder salt, sugar and egg, beating all the time making sure your flour does not get lumpy. Add your orange rind and lastly your sultanas.

Put oil in pan and when the oil is moderately hot, add teaspoons full of mixture, turning your fritters. Remove, let cool and sprinkle with cinnamon sugar.
