PICKLE GUACAMOLE
As jy vreeslik lui is op ‘n Maandag, noem dit dan Meatless Monday. Dit was so gou en heerlik pasop maar vir die chilli as jy nie van warm hou nie.
- 3 avocados, pitted and mashed
- 2 tablespoons pickle juice
- ½ cup chopped pickles, plus more for garnish
- ¼ red onion, finely chopped
- 1 garlic clove, minced
- 1 tablespoon chopped dill, plus more for garnish
- 1 red chilli, finely chopped
- 1 green chilli, finely chopped
- kosher salt
- freshly ground black pepper
- Cracker bread , for serving
Combine all ingredients except cracker bread in a large bowl. Stir to combine. Season with salt and pepper.
Place in a serving bowl and garnish with more chopped pickles and dill.
Serve with cracker bread chips.
