MOM’S BANANA LOAF
This is my Mom’s recipe – I’ve made it many times and its quick and easy!
- 115 gr margarine, melted
- 1 cup castor sugar
- 2 eggs
- 2 cups cake flour
- 1 teaspoon baking powder
- 1 teaspoon bicarb of soda
- ¾ cup milk
- pinch Salt
- 3 bananas, mashed
Dissolve the bicarb in the milk.
Mix castor sugar, margarine and eggs together.
Sift dry ingredients together: flour, salt and baking powder.
Add bicarb and milk mixture gradually.
Add banana’s last and mix in.
Note:
I use a hand mixer to make sure I get all the lumps out.
Place the batter in a small bread tin sprayed with Spray and Cook.
Bake for 1 hour on 180ºC.

Thank you for this recipe! My sons love banana bread and I decided to double the recipe. Just finished baking 1 loaf and 24 muffins. I didn t have a to go recipe , well now things have changed ??
I really want to make this, but don’t have vanilla. Can I substitute it with a different ingredient?
Any essence will be perfect, like caramel essence… or use lemon zest
Hi Laney! Since I m home so much lately (Quarantine Life), I want to try making this finally. Can I make this recipe without baking soda? Should I double the baking powder? Thanks!
Morning yes you can bake it without the baking soda, the colour will be lighter. Add 2 teaspoons extra baking powder in and 15 ml vinegar.. enjoy
