MAYONNAISE CHOCOLATE CAKE CUP CAKES
- 500 ml cake flour
- 3 eggs
- 125 ml cocoa
- 400 ml sugar
- 250 ml Cross and Blackwell mayonnaise
- 10 ml baking powder
- 10 ml bicarbonate of soda
- 5 ml vanilla essence
- 330 ml warm water
Sift dry ingredients together twice.
Beat egg, sugar and vanilla until creamy.
Add mayonnaise and mix.
Add dry ingredients gradually while adding water.
Do not over mix. Spoon the mixture into the cupcake cups.
Bake at 180°C for 20 minutes.
- Icing:
- 140 g butter
- 4 tablespoons cocoa powder
- 3 cups icing sugar
- 1 tablespoon vanilla essence
- 2 tablespoons milk
Beat together, if too stiff, add milk little by little.
Let the cupcakes cool completely and ice to taste.
