KORINGSLAAI IDEES

‘n Eetplek hier by ons verkoop hierdie koringslaai, en ek wil bittergraag ‘n resep hê as enige iemand kan help. Ek kan virseker Dijon mosterd proe, dalk mayonnaise en dan is daar iets suurs in (wat glad nie oorweldig is nie) Verder as dit is dit net koring en wortels. Kan enige een help?

  • Wheat salad:
  • 250 ml uncooked wheat (If wheat is not available, use brown Basmati rice)
  • 1 green pepper, red or yellow can be used, slice in small pieces
  • 410 g tin of peaches (more or less the quantity) slice in small pieces (I keep the sauce of the peaches left in the tin to add it to the sauce.
  • 62 ml sultanas or raisons
  • salt for cooking process of wheat
  • Sauce:
  • 50 ml olive oil
  • 3 ml turmeric powder
  • 6 ml curry powder
  • 25 ml Mrs Balls chutney
  • 25 ml sugar
  • 25 ml vinegar
  • 1 tin condensed milk, optional

Soak the wheat for at least 2 hours.
Rinse and add enough water to cover and microwave for 10 minutes on high power.
Place wheat in colander and rinse under cold water.
Place in bowl, add green peppers, sultanas and peaches.
Mix all the ingredients for the sauce together and make sure the sugar is dissolved, and then you add the condensed milk.
Cover the dish and place in fridge. The taste will improve after a day and will keep in fridge for at least 4 days.

I think it’s stamp koring, I make mine with mayonnaise, a little curry powder, some cut up peaches and raisins soaked in a little warmed juice from the peaches

Koringslaai:
Kook die stampkoring met 1 eetlepel gelyk kerriepoeier en sout daarin tot sag. Spoel koring af. Gooi gesnyde gherkin, fyngekapte ui, blokkies gesnyde perskes , blokkies cheddar kaas, fyngekapte green pepper en 1 grof gerasperde wortel by. Meng net met ‘n bietjie mayonnaise en halwe teelepel mosterd poeier.

Ek kook gewoonlik die koring tot nog “chewy’ nie pap nie. Meng half koppie mayonnaise, half koppie chutney, 1 teelepel kerrie, meng met koring en sny blik perskes in. Vinnig en lekker. O en pas die bestanddele aan na jou smaak, as jy bv van meer chutney smaak hou gebruik bietjie meer of kerrie. En dit moet nie te souserig wees nie maar ook nie te droog. Laat ‘n paar uur in yskas en indien nodig meng nog mayo of chutney in. Geniet!
