HOMEMADE GRANOLA

So yummy and so versatile, with the only essential item being oats. Everything else can be substituted to personal preference.

  • 150 g oats
  • 30 g almonds, chopped
  • 20 g cashews, chopped
  • 20 g raisins
  • 30 g pumpkin seeds
  • 20 g chia seeds
  • 20 g flax seed, broken
  • 10 g coconut flakes
  • 10 g cranberries
  • 40 g coconut oil
  • 10 ml honey
  • salt
  • cinnamon

Preheat oven to 180°C.
Mix oats, nuts, raisins and seeds in an oven proof dish.
Mix in coconut oil and add salt and cinnamon to taste (I use 1 teaspoon cinnamon powder).
Put dish in oven for 10 min, before removing and mixing it up a with a spoon to prevent the raisins from burning.
Remove from the oven and add the honey – mix through the granola mixture.
Return the dish to the oven for an additional 10 – 15 min, taking care not to burn the mixture by mixing it through every 5 min.
Remove from the oven and mix the coconut flakes through. You can add it at the beginning but it changes to a browny colour, hence why I add it at the end.
Store in a sealed jar and enjoy with milk/ yogurt/kefir etc.
Recipe fills 1 coffee jar (450 g)

Note:
Other potential options to add, include: goji berries, sunflower seeds, dates, other nuts
