HERBY MUFFINS
Today the “Herby muffins”. My daughter, who likes trying my culinary experiments, ate them at once and another two for packed lunch. The next time I will prepare many more 🙂
- 200 g of cake flour
- 1 teaspoon of baking soda
- 125 ml of milk
- 50 ml of oil
- 1 egg
- 200 g of courgettes (baby marrows)
- 75 g of ham
- 100 g of cheese
- 2 teaspoon of mixed herbs
- salt and pepper
Heat the oven up to 185°C. Put some paper muffin moulds into the “dimples” of a baking pan for muffins.
Clean the courgettes and grate them. Add salt and leave them in a bowl for 30 minutes.
Dice the ham and cheese.
Mix together the dry ingredients of the muffins: flour, baking soda and mixed herbs.
Mix the eggs and oil in a separate bowl. Add the egg mixture to the dry ingredients.
Drain the courgette and add it with the ham and cheese to the muffin dough.
Spice it up with salt and pepper and stir.
Put the dough into the paper muffin moulds up to 2/3 of their height.
Bake for 30 minutes.
