Recipe and photo: Elize de Kock
Freezer sandwiches can serve as quick meals at breakfast, lunch or dinner! Spoiling my disabled son, every fortnight he is getting 14 frozen sandwiches. Why not spoil him, and so easy to make. The variety is endless as is the convenience when you’ve got delicious breakfast, lunch, and dinner sandwiches all ready to go in the freezer.
A list of freezer sandwich recipes and ideas to make mealtimes easier. Do not mix the condiments with the filling, spread it on the sandwiches instead, this prevents sogginess.
- bobotie and chutney
- pulled pork with mustard
- pork burger patties pre-cooked, with cheese and jalapeño
- chicken burger patties pre-cooked, with cheese and jalapeño and hot chilli sauce
- variety of cold meats, and cheese with a sauce like, bbq, sweat chilli, peri peri, mayonnaise, etc. Cold meat on both sides, the sauce and cheese in the middle to prevent the bread from going soggy.
- cooked chicken, do not mix the mayo with the chicken, spread the mayo on the sandwich
- curry mince and chutney
- roast beef and swiss cheese
- tuna mayo, spread the mayo on the sandwich
- peanut butter and jam – be sure to have peanut butter on both sides of the bread, jam in the middle
- cheese sandwiches
- Into a Panini press – no thawing required!
- Whether you’re filling your sandwiches with cooked bacon, chicken, beef, or pork, be sure to cook the filling well.
- Cool it completely before assembling the sandwich to eliminate sogginess. Whether you serve the thawed sandwich cold or hot later, really depend on your preferences.
- It may seem counterintuitive, but slathering on a layer of mayonnaise, mustard, pesto, or hummus plays a crucial role in keeping sandwich bread intact and sogginess at bay.
- Some common sandwich fillings that DO NOT freeze well include:
- Hard-cooked egg whites (freezing toughens them).
- Jelly or jam (soaks into bread and makes it soggy) with peanut butter on both sides it freezes well.
- Tomatoes, lettuce, pickles, onions, etc. become limp when thawed; they can be added to thawed sandwiches just before eating them
- Note:
- Use frozen sandwiches within 1 to 3 months for best flavour and quality. Thaw individual sandwiches in their sandwich bag or other wrapping in the refrigerator. Transfer them to the refrigerator the day before you plan to eat them. If you toast them in a press it can be done from frozen no need to thaw.
