ELIZE’S APPLE AND BLUEBERRY TART
If you love apples, here is an easy, moist version of my apple tart….Something totally different from just an ordinary apple crumble/pie.
- Fruit:
- 10 medium Granny Smith apples
- 250 ml frozen blue berries
- 1 teaspoon ground cinnamon
- 1 teaspoon mixed spice
- 125 ml sugar
- 100 ml water
Peel and core apples, cut into small pieces, 1.5 cm x 1.5 cm.
Add all other ingredients (except blue berries) to a sauce pan.
Boil over very low heat until apples are tender.
Only now, add the frozen blue berries and just boil through.
Allow to cool before adding to batter mixture to the batter.
- Batter:
- 500 ml sugar
- 6 tablespoon butter
- 6 eggs
- ½ teaspoon salt
- 500 ml cake flour
- 150 ml milk
- 2 tablespoons baking powder
Sieve sugar and mix with butter. Add one egg at a time and combine.
Sieve cake flour, baking powder and salt and mix in.
Add milk and combine.
Spread the batter evenly in a large ovenproof dish or two smaller dishes (sprayed with Spray and Cook).
Place fruit evenly over batter and push lightly into the batter.
Bake at 180ºC, 30 – 35 min.
- Sauce:
- 300 ml sugar
- 4 tablespoon butter
- 1 teaspoon vanilla
- 250 ml milk
- 1 can Ideal Milk
Boil all sauce ingredients together for 5 – 10 min.
Use a fork to prick tart into portion sizes.
Pour sauce over immediately when tart is taken from oven and still hot.
Serve warm with ice cream and custard or cold as a tart for an afternoon tea.
