EASY SEAFOOD PAELLA
Tonight I went for things I had in the cupboard, the fridge and the freezer.
- 1 onion, chopped
- 1 tablespoon grapeseed oil
- 2 teaspoons crushed garlic
- 1 red pepper, chopped (I have bottled capsicum in my fridge, so I sliced up some of that)
- 1 teaspoon smoked paprika
- 1 teaspoon turmeric
- 1 cup arborio rice (it will be absolutely fine if you use normal long-grain rice)
- 3 cups vegetable stock
- 375 g frozen seafood mix
- 1 cup frozen peas
- lemon juice, to taste, optional
Fry the onion in the oil on a medium heat until soft and fragrant.
Add the garlic, red pepper, paprika and turmeric and continue frying for another minute or two. Let your nose be the boss of you.
Add the uncooked rice to the pot, stir it through to let all the spices say hello to the rice and then add the stock.
Cover the lid and let the rice mixture simmer for around 20 minutes until most of the liquid is absorbed. Add the frozen seafood and peas to the pot or skillet, place the lid back on and simmer for another 10 minutes or so (when the calamari in the mix is cooked, you’re done).
If lemon juice is your vibe, sprinkle some over just before serving.
