EASY PEANUTBUTTER TRUFFLES

  • 90 g Digestive cookies, crushed
  • 250 g icing sugar
  • 120 g unsalted butter, melted
  • 230 g creamy peanut butter + 50 g for topping
  • 200 g dark /milk chocolate

Mix crushed cookies, sugar and butter together until nicely mixed.
Add the 230 g peanut butter and mix well.
Roll into balls and place on a cookie sheet covered in greaseproof paper.
Place in freezer for 20 min.
Melt chocolate with the 50 g peanut butter.
Remove balls from freezer and roll in melted chocolate using forks.
Drip off excess chocolate and place back on cookie sheet.
Freeze for a few minutes until chocolate is set.
Decorate as desire.
