DURBAN MILK NAAN
- Wet ingredients:
- 250 ml full cream milk
- ¾ cup boiling water
- 4 tablespoons of butter/ghee
- Dry ingredients:
- 4 cups cake flour
- 4 tablespoons sugar
- 4 tablespoons of milk powder (Ellis Brown, Cremora or whatever you have)
- 1 teaspoon salt
- 1 sachet yeast (purple packet preferred)
- sesame seeds, for sprinkling
Combine all wet ingredients and set aside.
Combine all dry ingredients together.
Mix wet and dry ingredients and leave in covered dish for two hours.
Break off small balls from dough and roll in the palm of your hand. Place next to each other in a Pyrex dish and brush with milk.
Sprinkle sesame seeds over raw balls. Bake at 180 °C for 15 – 20 minutes.
Put some melted butter on top as soon as it is baked.
Best served hot with a curry or soup.
