DOGGIE CAKE OR PUP CAKES

Yesterday my dog turned 11 so I baked her some ‘pup cakes’. I halved the recipe and made 6 cupcakes (or pup cakes).

  • Batter:
  • 1 cup cake flour
  • ½ teaspoon baking soda
  • 1 egg
  • 2 tablespoons vegetable- or coconut oil
  • ¼ cup creamy peanut butter
  • 1 banana, mashed
  • ½ cup milk
  • Frosting:
  • ½ cup nonfat Greek yogurt or any plain yogurt of your choice
  • ¼ cup creamy peanut butter

Preheat oven to 350°F or 176ºC.
Combine the flour and baking soda in a mixing bowl and set aside.
In another bowl, mix together the oil, peanut butter and banana until creamy, add the egg and mix.
Add the flour mixture to the banana mixture and stir until well combined.
Slowly add the milk and mix.
Pour the batter into a 6” (15 cm) or 8” (20 cm) round cake tin or fill cupcake liners ¾ full in a muffin tray.
Bake for 25 – 30 minutes for the cake or 15 – 18 minutes for the cupcakes or until the toothpick comes out clean when tested in the center.
Let it cool for 10 minutes.
For the frosting, mix the yogurt and peanut butter until well combined and fluffy.
Once the cake is cooled, cover with the frosting.
