DEBONED LEG OF LAMB IN CLAY COOKER
- ± 2 kg deboned leg of lamb
- ½ bottle Italian salad dressing
- lamb spice
- 2 onions
- 3 cloves garlic
- salt and pepper to taste
Carefully take lamb roll out of mesh and open up, spice with lamb spice, salt and pepper reroll and put it back into netting.
Marinate leg of lamb few hours in the salad dressing.
Soak your clay baker in water for about ½ hour before use.
Cut the onions in half, no need to peel.
Put onions and whole garlic cloves at the bottom of your clay baker and put the marinated leg of lamb on top of onions.
Now set your oven to 190°C remember not to preheat your oven with the clay baker.
Put your clay baker in the cold oven and bake for 2½ hour.
