DATE AND COCONUT ROLLS

  • 250 g butter
  • ½ cup of sugar
  • pinch of salt
  • 4 teaspoons baking powder
  • 3 cups cake flour
  • 2 cups dates, pits removed and chopped fine
  • milk for dipping
  • desiccated coconut to coat

In a large bowl, cream butter and sugar.
Sift dry ingredients and add to butter mixture. Mix to a soft dough.
Break off small pieces of dough in your hand, flatten and insert dates onto flattened dough.
Roll into an oblong shape.
Dip the rolls in milk and then coat with desiccated coconut.
Spread the date rolls on a baking sheet covered with parchment paper and bake in preheated oven at 180ºC for 20 minutes.
