CURRY TOMATO RELISH / KERRIE TAMATIESMOOR

‘n “Zambia Boerie Roll”. Gebruik die beste wors wat jy kan kry en die is heerlike, nou net uit die oond, bruin brood rolletjies.
The perfect accompanying sauce for crumbly putu pap or boerewors rolls.

  • 4 kg peeled tomatoes, chopped
  • 1 kg onions, finely chopped
  • 1 ½ cups sugar
  • 750 ml vinegar
  • 3 tablespoons mustard powder
  • 3 tablespoons curry powder
  • 1 tablespoon mother in law, optional
  • 2 tablespoons Maizena
  • 3 tablespoons salt

Mix tomatoes and salt and leave in a suitable container overnight.
The next day, get rid of the water by draining the tomatoes in a colander.
Boil tomatoes, onions, sugar and vinegar until onions are done.
Mix, mustard powder, curry powder, mother in law if used, and Maizena with a little water into a thin paste, add to the tomatoes and boil, stirring continuously until thick.
Bottle warm, in sterilised bottles.

Heerlike “rare fillet”, en as jy “rare” maak gebruik jy meer sout op jou vleis. As jy van dit gaarder hou, dan maak jy jou steak net gaarder en geniet dit soos jy daarvan hou.

‘n Boere Prego Sous dit is dieselfde sous wat ek op die boere wors rolletjies of krummel pap gebruik.
Jy “spice” dit net op deur ekstra chilli te sny en dit dan daarby te kook. Dit is wat so lekker is van ingelegde produkte.
