CREAMY TOMATO MEAT LOAF
- 750 g minced beef
- 150 ml sour cream
- 1 packet tomato soup mix
- 1 onion, finely chopped
- 2 cloves of garlic, finely crushed
- salt to taste
- 5 ml paprika
- chopped red chilli, to taste
- tomato sauce or sweet chili sauce, optional
Place beef in a large bowl with remaining ingredients and mix until well combined.
Press mixture firmly into a lightly greased 21 x 14 x 7 cm loaf tin, bake for approximately 1 hour at 160ºC, until well browned and firm in the centre.
Cover the top with a thin layer of tomato sauce or sweet chili sauce, 15 minutes before end of cooking time.
Turn out of tin, serve sliced with salad or pureed potatoes.
