CHRISTMAS FRUIT MINCE PIES

Traditionally made at our home for Christmas every year.
  • 125 g butter
  • 2 cups of cake flour
  • ¼ cup sugar
  • 1 teaspoon vanilla essence
  • 2 tablespoons of ice water
  • ½ bottle of safari fruit mince

Grease a small muffin tin.
Rub butter, flour together until fine textured.
Add the sugar, vanilla essence and ice water to form a dough.
Roll thin and use a muffin cutter to cut out 24 rounds.
Place the one circle of dough at the bottom of your greased muffin tray.
Add 1 teaspoon fruit mince and cover with another circle of dough.
Brush with egg yolk and bake at 180 ºC for 15 minutes.
Dust with icing sugar once baked.
