I made my banana bread with a twist and added cocoa powder, it really taste like chocolate banana bread.

  • ½ cup margarine or butter
  • 1 cup castor sugar
  • 1 teaspoon vanilla essence
  • 2 eggs
  • 2 cups self-raising flour
  • 2 levelled teaspoons baking powder
  • 1 teaspoon bicarbonate of soda
  • pinch of salt
  • ⅓ cup cocoa powder
  • 4 ripe bananas, mashed

Combine the margarine and sugar in a mixing bowl and mix well.
Add the eggs one by one to the sugar mixture, beating well after each one.
Add the vanilla essence and mix through.
Sift the flour, baking powder, bicarb, salt and cocoa powder.
Add the mashed bananas with the dry ingredients to the egg mixture and mix well. Don’t overmix.
Pour the mixture in a 9” x 5” loaf tin.
Place in a preheated oven at 190ºC for 45 minutes.
Test the loaf with a wooden toothpick in the center, if it comes out clean, the loaf is ready.

I used over ripe bananas.
If the mixture is too dry, add ½ cup of milk.
I also use the same recipe to make muffins. Instead of a loaf pan, pour the batter in a muffin pan and bake for 12 to 15 minutes.
