CAKE IN A MUG
Spoilt the boys with something decadent and deliciously messy for dessert.
- 4 tablespoons self-raising flour
- 4 tablespoons castor sugar
- 2 tablespoons cocoa powder
- 1 medium egg
- 3 tablespoons milk
- 3 tablespoons sunflower oil
- a few drops of vanilla essence or other essence
- 2 tablespoons chocolate chips or nuts, etc. (optional but I used crushed baking choc)
Add self-raising flour, castor sugar and cocoa powder to the largest coffee mug you have (to stop it overflowing in the microwave) and mix.
Add 1 medium egg and mix in as much as you can.
Add the milk, sunflower oil and a few drops of vanilla essence and mix until smooth, before adding chocolate chips or nuts and mix again.
Centre your mug in the middle of the microwave oven and cook on high for 1½ – 2 mins, or until it has stopped rising and is firm to the touch.
Enjoy just as it is or add a spoon of ice cream.
