BULGAR WHEAT SALAD

BULGAR WHEAT SALAD

  • ½ cup bulgar wheat
  • 1 cup chicken stock
  • ½ – 1 cup cocktail tomatoes, halved
  • ½ – 1 Mediterranean cucumber, seeded and chopped
  • 1 small red onion, chopped
  • handful of Italian parsley, chopped
  • handful rocket or baby spinach, optional

Cook the bulgar wheat in 1 cup chicken stock, drain when ready.  Let it cool.
Lightly mix all ingredients together. Chill and enjoy.
