BULGAR WHEAT SALAD
- ½ cup bulgar wheat
- 1 cup chicken stock
- ½ – 1 cup cocktail tomatoes, halved
- ½ – 1 Mediterranean cucumber, seeded and chopped
- 1 small red onion, chopped
- handful of Italian parsley, chopped
- handful rocket or baby spinach, optional
Cook the bulgar wheat in 1 cup chicken stock, drain when ready. Let it cool.
Lightly mix all ingredients together. Chill and enjoy.
