BEAN MEDLEY SALAD

  • Salad:
  • 1 can chickpeas, drained
  • 1 can black beans, drained
  • 1 can 4 bean mix, drained
  • 1 can whole kernel corn, drained
  • 2 tomatoes, chopped
  • 1 green pepper, chopped
  • ½ cucumber, chopped
  • 1 stalk celery with leaves, chopped
  • 1 cup cranberries
  • ½ red onion, chopped
  • salt and pepper
  • Dressing:
  • 1 cup olive oil
  • 3 tablespoon lemon juice
  • zest of one lemon
  • 1 cup baby spinach, chopped
  • fresh herbs to taste: I used parsley, chives, thyme
  • 1 tablespoon honey

Mix all the salad ingredients and place in a salad bowl.
Mix all dressing ingredients  in a blender till a smooth dressing (see 2nd photo) and pour over the salad.
Mix through and serve.
