LAMB NECK CURRY – PRESSURE COOKER
Lamb neck curry (in electric pressure cooker) with yogurt naan and tomato and cucumber salsa. Even in this heat we felt like curry for lunch😂
- 1 kg lamb neck pieces
- 2 large onions slices
- oil for frying
- 1 cup of chicken stock
- 3 tablespoons tomato paste
- enough curry powder, to your taste
- 2 garlic cloves, grated
- 1 cm fresh ginger root, grated
- 2 potatoes, peeled and chopped
Fry the onions and neck pices until it gets some colour.
Add the chicken stock and steam under pressure for 45 min or until the meat is soft and coming off the bones.
Fry the curry powder, garlic and ginger in a bit of oil for a few minutes and add to the lamb neck in the pressure cooker along with the tomato paste and potatoes.
Steam for 7 minutes until the potatoes are cooked.
Serve with yogurt naan and salsa.
