CHOCOLATE CUPCAKES WITH OIL

“My kids love these in their lunchboxes. Yields 16 cakes (if you want them muffin size then you get 12).”

  • 2 eggs
  • 1 cup sugar
  • 1 teaspoon vanilla essence
  • ⅓ cup cooking oil
  • 1 cup milk
  • 1 tablespoon vinegar
  • ¼ cup cocoa powder
  • 2 cups cake flour
  • ½ teaspoon baking powder
  • ½ teaspoon bicarbonate of soda
  • Whisk eggs and sugar for two minutes.
  • Add vanilla essence, cooking oil, milk and vinegar and whisk for another three minutes.
  • Add sifted dry ingredients and mix until combined.
  • Pour into greased cupcake tray.
  • Bake at 180 °C for 20 minutes.
