CHOCOLATE CUPCAKES WITH OIL

“My kids love these in their lunchboxes. Yields 16 cakes (if you want them muffin size then you get 12).”
- 2 eggs
- 1 cup sugar
- 1 teaspoon vanilla essence
- ⅓ cup cooking oil
- 1 cup milk
- 1 tablespoon vinegar
- ¼ cup cocoa powder
- 2 cups cake flour
- ½ teaspoon baking powder
- ½ teaspoon bicarbonate of soda
- Whisk eggs and sugar for two minutes.
- Add vanilla essence, cooking oil, milk and vinegar and whisk for another three minutes.
- Add sifted dry ingredients and mix until combined.
- Pour into greased cupcake tray.
- Bake at 180 °C for 20 minutes.
